I make a confetti bean salad with black beans, garbanzo beans, carrots, onions, garlic, cukes and Organicville Tomato Vinagrette.
Quinoa stuffed tomatoes with steamed rice and garbanzo beans (or hummus).
Mjaddra (lentils with rice dish).
Whole/multi grain bread
Peanut butter
alfalfa sprout
sandwich!
How about a mixture of baked beans (fibre) or another pulse and lentils, some marinated tofu (protein) with tomato salsa, onion and red pepper, on a bed of salad, with some pine nuts sprinkled over the top?
A veggie wrap on a whole wheat or multigrain tortilla with chickpeas or hummus .
A peanut butter and banana sandwich on whole grain bread.
Brown rice and beans (add other veggies/spices to taste).
