Roasting cucumbers?!

Roasting cucumbers?

Got a great deal on cukes at the market today. Would like to know if anyone has a recipe for cucumber roasting?

Split them in half, scoop the seeds, Brush with Olive oil or Italian dressing and grill them over *HOT* coals for a few seconds until they start to show grill marks. The contrast between warm and toasty and cool underneath is great! Mesquite coals are a plus, Hickory not so great, Pecan is horrid.

Oven broiled or baked (since you mentioned roasted); I've never found a great recipe but I've played with the idea some. The cuke's tend to get bitter but if you treat them like eggplant (salt and drain) they do ok. They have a taste and texture similar to Zucchini then but with Cuke overtones.

They don't roast well because of the amount of water in them. If you really want them roasted, I would slice them very thin and roast then until crisp.

Very Tough to do. why dont you core them and stuff them with something, like a tofu or even a nice mix of chick pea, bean and lentil (all tossed in lemon, salt, pepper, garlic, olive)

they make a great app and so refreshing.

Cucumbers are the best Cold sprinkle a little vinegar on them.
and salt and pepper. them them marinate and grill them if you would like to. put it on your roast..and bake it hey I have never tried it but I am gonna now.

I've never heard of cooked cucumbers...sorry.
