I have "The Best-Ever Vegetarian Cook Book". It has over 200 recipes with color pics to help you along. I got it at Borders Book store. The author is Linda Fraser. I hope this helps.

The best one I have, that covers everything from what utensils to use and which to avoid, nutrition, general preparation, soaking beans, and all that stuff which beginners to very experienced people can use as a reference is:

The American Vegetarian Cookbook from the Fit for Life Kitchen

All recipes are easily augmented to accommodate whatever ingredients you might have in your cupboard. I use this book so often as a reference that I stuck on plastic index tabs for each chapter. I’ve never followed a recipe exactly, but it always turns out well.

I believe that meat-eaters should have this book too just because it's so useful, and since one can always throw meat into just about any recipe.
