What is a good Egg Substitute for cheesecake?

I'm cooking for some vegetarians over Christmas and was wonder what the best egg substitute would be in a cheesecake. Will just 1/4 cup of Tofu work?


Answers:
For each egg called for, substitute 1/4 cup soft (silken) tofu. Blend it well with the other liquid ingredients. Also add 1/4 teaspoon extra leavening per egg to compensate for the leavening action lost by omitting the eggs.

Substitute 1/2 mashed banana OR 1/4 cup applesauce OR 1/4 cup prunes (for dark batters) PLUS 1/4 to 1/2 teaspoon baking powder for each egg in the recipe. Take note, pureed fruit substitutes will also alter the flavor slightly.

Use an egg replacer according to the manufacturer's suggestions. If the result is not as tender as you might like, add 1 teaspoon canola oil for each egg called for in the original recipe.

I use this recipe as a substitute for eggs (I use it a lot for friends, I am vegetarian, they are vegan, works great). It is from vegansociety.

instead of 1 egg, you can use...
? 1 tbsp gram (chick pea) or soya flour and 1 tbsp water
? 1 tbsp arrowroot, 1 tbsp soya flour and 2 tbsp water
? 2 tbsp flour, ? tbsp shortening, ? tsp baking powder and 2 tsp water
? 50g tofu blended with the liquid portion of the recipe
? ? large banana, mashed
? 50 ml white sauce

well just so you know, a vegetarian can eat eggs and milk but maybe they are just lacto-veggies? i dont know a good egg substitute but i do know a good vegan (chocolate) cheesecake.

3 cups medium tofu
1 cup margarine, melted (you could use butter, since they are not vegan and margarine is basically plastic)
1-11/2 cups sugar
3/4 cup cocoa powder
2 tsp vanilla extract
1/4 tsp salt
1/2 cups soy milk
1 graham cracker pie crust


graham cracker crust:
11/2 cups graham cracker crumbs
2-3 tbsp oil
3 tbsp water
dash of salt
DIRECTIONS FOR CRUST:
in a medium bowl mix together all ingredients. press the mixture evenly onto the bottom of a pie plate of cheesecake pan, using your fingers or the back of a spoon.


DIRECTIONS FOR CAKE:
in a blender blend alll ingredients until smooth. pour into a cheesecake pan that has been lined with a graham cracker crust. chill for at least 12 hours before eating.

If they are vegetarians, eggs are okay. Vegans...well give them pine cones and they should be happy. Check and see if they have leather shoes.
