What could I make for Christmas dinner but I am vegetarian?!

Question:

What could I make for Christmas dinner but I am vegetarian?

I don't want anything like tofurkey because you can't buy them here. Recipes please (or a website).

Answers:
We are baking spinach lasagna.
It is also called Florentine and sometimes you can find the recipe of the pasta packages.
Basically, you layer in alternating layers the cooked noodles, spaghetti sauce, a mixture of ricotta cheese and chopped frozen spinach cooked and well drained. Sprinkle some grated Parmesan cheese on top before baking. My son is a vegetarian and this is one of his most favorite casseroles.

Christmas with out meat? What are you thinking?

You could make a lentil loaf and all the sides. I'm an accidental cat lover, too. I have 5. Perhaps try a good pasta dish....I'm just trying to think. I'm going to a traditional holiday dinner. ( I fill up on sides) Sorry..didn't realize I omitted a recipe. Try google or the like for that, but scan through the ingredients.

Make a real turkey with stuffing, mashed potatoes, candied yams, caramelized carrots, green bean casserole, fresh baked biscuits, pumpkin pie. Invite some meat-eating friends over and let them eat the turkey. Christmas dinner is about sharing your table with friends and loved ones, not just about the type of food being served. Merry Christmas.

Veggie Lasagna, or meatless baked ziti with garlic bread or olive crostini, a big salad, whatever dessert you please, and some veggie soup..
Vegetable stew over noodles, mashed potatoes, salad, dessert...
Baked tofu cutlets with herbs and potatoes, some kind of veggie side, etc.

A good side would be green bean casserole. BettyCrocker.com.

We always had tofu triangles for the Holidays. Triangle cut tofu fried then stuffed with wild rice then baked. Serve covered in miso gravy with mashed potatoes and all the sides! Yum. Vegetarian times should have the recipe!
