i've been finding a recipe for my guest need any recipe that is vegetable only, NO MEAT.

Any kind of Pasta dish would be good. Something like Baked Ziti or Fettucini Alfredo. You can even make a vegetarian Lasagna with eggplant substituting the beef.

Garden Burgers, Garden Hot Dogs, Garden Corn Dogs... usually found at any grocery store in the frozen section. Then there is Tofu that can be used in place of meat and can be prepared many different ways. I know they sell different varieties of that and soy products but I couldn't tell you much more than that.

Grilled portabellos instead of hamburger. Veggie lasagna. Fried rice and vegetables. The possibilities are endless. I would suggest looking up a veggie cookbook, where are many on the web.

The healthiest dish would be fish like salmon, halibut or mackerel with a fresh salad, tomatoes, tofu and ginger.

do you know how to make humus?

chick peas (garbanzo beans), tahini, cayenne, garlic, paprika,lemon juice,and i put cilantro. salt

the major ingredient is the chick peas.....about 3 or 4 cups cooked, tahini about three or 4 teaspoons. half a teaspoon cayenne, two teaspoons paprika, be careful with lemon juice it's to taste, crushed garlic is also to taste but anybody who likes humus loves garlic. and salt that's up to you.....add a little and taste add a little more and taste....you know. all of this is crushed either by hand or in a blender or food processor.

i have used this as a spread in wraps. i guess one could use pita or there is spinach tortilla. spread humus on half the tortilla,then i pile on some julienne style veggies and roll up your wrap.
