Answers:
Maybe this is more than you want to know but 100% Grass-Fed organic and raw milk cheese FREE OF ALL ANTIBIOTICS AND GROWTH HORMONES is the healthiest!
Cows are naturally grass-feeding animals. But 85-95% of dairy cows are raised in unhealthy confinement on grain, mainly corn, as it is more cost-efficient for agribusiness. It changes the ph in cows, so increases the need for use of antibiotics. Many of these cows are fed growth hormones as well. So cheeses on virtually all grocery store shelves are severely unhealthy, even harmful. Organic cheese, made from certified 100% organic milk from grass fed cows on the other hand, contains a perfect balance of omega-3 and omega-6 fats, has high conjugated linoleic acid - most potent cancer fighter (5 times more than from grain-fed cows!). Considerably higher in beta-carotene, vitamin A, vitamin D, and vitamin E than cheese from grain-fed sources. And all the same varieties of cheese are made from it.
Meadow Maid is a supplier of these cheeses. You can email me if interested in learning more.

The healthiest cheese i know of is non-fat cottage cheese with pineapples in it, It has 0 fays (Trans or Saturated), and is packed with protein. about 24g per serving.

I'm a big fan of low-fat feta cheese. With most brands, I can't tell the difference.

there are no bad cheeses and all will be ok for your health if you eat in moderation. i couldn't even begin to pick a fave!

I think that cheese made from ewe's milk should be very healthy.
