CHOCOLATE MILLIONAIRES (DIABETIC)

-1/3 c. non fat dry milk
-4 pkgs. equal (not as good with Sweet and Low)
-2 tsp. cocoa
-1/3 c. uncooked oatmeal
-1 tbsp. peanut butter
-1/4 tsp. vanilla
-2 1/2 tbsp. water
-2 tbsp. raisins

Method:-

1) Mix dry milk, Equal, cocoa.
2) Stir in oatmeal.
3) Add peanut butter, vanilla and water. Stir until well blended.
4) Add raisins last.
5) Roll into small balls and flatten with fingers.
6) Chill for at least 30 minutes.

LOW - FAT SUGAR COOKIES

1 1/2 c. confectioners' sugar
1 c. tub butter, room temp.
1/4 c. skim milk
1 tsp. vanilla extract
1/2 tsp. almond extract
2 1/2 c. flour
1 tsp. cream of tartar
1 tsp. baking soda

Cream sugar and butter. Add milk and extracts. Stir in flour, tartar and soda and mix well with mixer. Refrigerate 2 to 3 hours. Preheat oven to 350 degrees. Divide dough in half and roll each half out to 1/4" thick on lightly floured board. Cut into shapes and place on lightly oiled baking sheet. Bake for 8 minutes or until golden. Let cool 3 to 4 minutes before removing from baking sheet

Merigues are low in fat because they're mostly egg whites.



3 egg whites
3/4 c sugar substitute (Splenda is good)
1 cup carob chips (can be skipped because although a natural sweetener and chocolately, they do raise blood sugar in some)
1/2 c walnuts

Mix sugar to egg whites and beat until very very stiff. Stir in chips and nuts. Drop on greased cookie sheet or cookie sheet lined with ungreased foil. Bake at 375 degrees for 40 minutes.
