Easy meals for losing weight?!

I have some suggestions for making any recipe more healthy!. I've found thru a lot of experience that you can cut the fat (butter, vegi oil, etc) that goes into most recipes!. The first time I make it I cut it by 1/4, if that turns out ok the next time I take it down by half of the original recipe and so on till I find the minimal amount of fat that it needs!. You can do the same with sugar!. BE CAREFUL when trying this with baked goods, cutting the butter or sugar in a cookie recipe or anything of that sort can drastically ruin the recipe!.
I'm not a vegitarian but I do love veggies so several years ago I started adding lots of veggies to lots of recipes that didn't have much for veggies before!. I think this can be done using whatever veggies you like best and it can be done with fresh or frozen veggies!. Things are more flavorful and delicious as well as more healthy!.
Now a couple of my favorite vegitarian dishes!. I usually eat vegetarian at least one day a week, sometimes two!. I think that at 13 you are old enough to prepare any of these and your family will be amazed at your skills!.
Cheesy Rice Quesadillas
1 pkg corn tortillas (more healthy than flour)
1 pkg Rice a Roni Spanish Rice
1 can diced tomatoes w/chilies
1 can corn, drained
1 can black beans, rinsed and drained
1 cp chunky salsa, med or hot to taste
Cheddar cheese
Sour Cream
Salsa
Prepare the Rice a Roni per instructions on the box in a skillet!. When it’s done stir in the tomatoes!. Make sure the beans are well rinsed with water and drained well!. Add them to the rice along with the corn and 1 cp of salsa, cover and simmer just till it's all heated thru!.
Heat a lrg skillet over med/high-heat!. Lower heat to med!. Spray with cooking spray, lay a tortilla in the pan and cover with the rice mixture to about 1/2" thickness!. Sprinkle with cheese, lay another tortilla over top and cook till the top tortilla begins to curl at the edges!. Flip it carefully with a pancake turner!. Cook that side 1-2 min!. Flip onto a plate and cut into quarters with a pizza cutter!. Top with sour cream and salsa, serve!.
Vegitarian Stuffed Shells
? med onion
1 green pepper, chopped
1 zucchini, chopped
2 cp mushrooms, sliced
1 can diced Italian tomatoes, drained
1 bottle Three Cheese Prego spaghetti sauce
3 cps shredded mozzarella cheese, divided
1 container cottage cheese
? tsp each parsley, basil, oregano
12-15 large shell pasta (you may want to cook a couple extra)
Spray a large skillet with cooking spray and stir fry the onion 3-5 min!. Stir in the green pepper and spaghetti sauce!. Add the tomatoes, juice and all!. Cover and simmer 15 min!. Stir in the zucchini and mushrooms!.
Get a large pan of water on to boil!. As soon as the water starts boiling add the pasta shells!. While they’re cooking, mix the cottage cheese and 1 cp of the mozzarella cheese in a bowl!. Add the herbs and stir till blended!.
When the pasta shells are done drain them in a strainer!. Run cold water over the pasta to cook them enough to handle!. Pick up each shell and fill it with the cheese blend and place it in a 9x12 baking dish!.
Pour the sauce over the noodles, make sure each noodle/shell is covered in sauce!. Sprinkle with the other 2 cps of mozzerella!. Bake 15-20 min or until bubbly and heated through!.
Minestrone Soup
Don’t let the long list of ingredients scare you off, this is really an easy soup to throw together!. 20 min prep, then just let it simmer awhile and it’s delicious!! Minestrone has historically been a soup into which the cook throws whatever is on hand!. Keep the broth the same and just put whatever veggies, beans and/or pasta you want
1 Tbls olive oil
1 onion, chopped
4 cups vegetable broth
1 cup red cooking wine (optional)
2 cans Italian diced tomatoes, undrained
1 can red kidney beans, rinsed and drained
1 can white beans, rinsed and drained
1 can green beans
4 cps fresh or frozen veggies
1 cp cooked pasta (elbow macaroni or whatever you have handy)
1 tsp parsley
1 tsp oregano
1 tsp basil
1 tsp marjoram
1 tsp garlic powder
pepper to taste
In a large pan, over med heat, heat olive oil and saute onion for 4 to 5 minutes!. Add vegetable broth, and red wine, simmer on med-hi!. Add cooked pasta, canned items, fresh or frozen veggies, herbs and seasonings!. Reduce heat to low and simmer for at least 30 to 40 minutes, the longer the better!.
Fill a medium saucepan with water and bring to a boil!. Add pasta and cook until tender!. Drain water!.Www@FoodAQ@Com

Try recipes such as veggie casserole!. Buy veggie burgers, veggie bacon!. Morning Star is a company that caters to the Veggie Lifestyle!. also, soy milk is a good way to start!. I used to be a Veggie but stopped!. It was fun though!. I still eat the veggie products but eat meat too!. ;-)
