Why we may not refreeze a heated meat?!


Question: Why we may not refreeze a heated meat!?
If you have frozen beef meat for example, and then you heat it so that you can cook it, why we may not freeze it again!? I was told like that!.Www@FoodAQ@Com

The most recent verdict on re-freezing defrost meat is it is okay as long as 1!. the meat was defrosted rapidly (microwave) or 2!. in a refrigerator!.

It is definitely ok to re-freeze meat that is still icy!.

However the quality of the product will be greatly reduced, it will be drier & less flavorsome!. You will most likely get the formation of ice crystals when you re-freeze!.

It is perfectly safe to defrost then cook(throughly) and freeze!. Only thaw out & cook this once though!.Www@FoodAQ@Com

I was taught to just cook food once and only reheat refrigerated leftovers once!. Freezing does not kill bacteria only suspends the rapid growth of bacteria ---bacteria count can double in just 15mins at room temperature!. With too much bacteria present, you could create food that poisons!.

Move the frozen meat to the fridge to defrost the night before --- not recommended that you heat the meat to defrost it!. Plan ahead to have your meat ready to cook!.Www@FoodAQ@Com

You can refreeze it becaus eyou have changed its state!. As long as it is cooked there is no problems what so ever!. If you just heated it up and it wasn't cooked then no you can't cos you're breeding bacteria!.
Cook it, chill it and freeze it!. Don't believe whoever told you that I have been inthe hospitality industry since I was 17 and that was 11 yrs ago and it's a fact that once you change somethings state ie meat you can re-freeze!.Www@FoodAQ@Com

It is all due to bacteria but also freezerburn as well!.
Because when you thaw the meat all the moisture start seeping out and if the meat is exposed you'll have a higher chance of freezerburn!.
If you want to refreeze it!. Cook it first to kill the bacteria then freeze it!.Www@FoodAQ@Com

No if you cook for example a spagetti sauce it will be fine if you freeze it and then use it later!.

What's bad is if you defrost raw meat and then refreeze that raw meat again!.Www@FoodAQ@Com

once you cooked then put it back into the freezzer then youll have a chance of getting reallly sick (food posining) bacteria will grow and you cant get em off with heat i wudnt do and its not healthyWww@FoodAQ@Com

Bacteria could start to grow in the meat,so it is a lot best if once you thaw the meat out dont re-freeze it againWww@FoodAQ@Com
