Why isn't my peach jelly set?!
I used a LeLane Juicer, and juiced the peaches, added 4 tbspn lemon juice, then boiled the 2 qts of juice with two pkgs of pectin, then added the sugar-boiled for another minute, then into the jars, and processed!. It's not set, what'd I do wrong!?Www@FoodAQ@Com

I always use the spoon test to tell if it's boiled long enough to jell!.!.so maybe it wasn't cooked long enough!. Using it for syrup isn't a bad idea though I've read that you can reboil jelly that hasn't set and try again!.
Another way to test to see if your jelly will set is: place a plate in the fridge, when it's chilled, drizzle a little hot jelly on it, put it in the fridge for 2 minutes!. When you run your finger through it, if it leaves a crinkly track mark it's good!. If not, cook longer and try again!. Good luck!Www@FoodAQ@Com

Is it hot and or humid where you are!? That can cause it to not set!.
