Gazpacho - a cold, tomato based soup filled with all kinds of chunky vegetables is very popular!. It's traditionally made in a blender!.

When I'm really scratching for something for dinner, I make a basic pea and mint soup, somewhat like this one:

I usually have peas and homemade liquid chicken stock in the freezer, and pick up a packet of fresh mint in the store - usually use 1 bag peas (500gm), 2 cups chicken stock and a bunch of mint, heat the whole lot up and puree it with the stick blender!. Is very, very easy and pretty tasty!.Www@FoodAQ@Com

anything that's got a broth base instead of cream (although I absolutely LOVE baked potato soup for the chilly months) aww, who am i kidding/ I'll eat it whether it's -10 or 110!.
also, remember that kid's book, with the recipe for 'Stone soup' !? If I remember correctly that was a thin based vegetable/potato soup!.Www@FoodAQ@Com
