Question: I fogot to put away leftovers for 3 hours b/f refrigerating!. ok to eat!?
it was cooked kale with vegetarian sausage (morning star farms) crumbled in it!.

Storing Leftovers
One of the most common causes of foodborne illness is improper cooling of cooked foods!. Because bacteria are everywhere, even after food is cooked to a safe internal temperature, they can be reintroduced to the food and then reproduce!. For this reason leftovers must be put in shallow containers, for quick cooling and refrigerated within 2 hours!. I looked this up to double check it!. Usually OK up to 4 hours unless it is chilled sushi or crab or milk-based (as in giblet gravy)

IF you put it in airtight containers and the food was out in say 90 F then it might be chancy, even possibly deadly!. Food with a reasonable acid content is less likely to spoil, and also if oxygen can get to it!. Once refrigerated, the airtight container is a good thing!.
