I got told once that its because it isnt in our bodies long enough for us to actuallu digest it!. sweetcorn has very tough skin!. If it was left in our bodies for a year then we would be able to break it down but our digestive systems wont let us do that, it just expels everything at the same time!. I was going to answer with a joke from Steve Punt and Hugh Dennis (Mary Whitehouse Experience) about sweetcorn and corn on the cob but I want to make this answer tasteful!.

you do digest the nutritous inner bit, it's just the outer kernel or skin we can't digest as it's made of cellulose!.Www@FoodAQ@Com
