The Jewish dietary laws (knows as Kashrus) are spelled out in the Bible in Leviticus, and expounded upon in the Talmud!. Today, the most common impact is that meat has to come from specific animals (namely, those that have split hooves and chew their cuds, or fish with fins and scales) and that one must look for a special symbol showing that a Rabbi ensured that all the laws were kept!.
