Good question, why would anyone want to have two names for any one thing!. Kind of reminds me of the many names we get as we are growing up like Tiger, no wait a minute Mr!. Woods has that name, then there is Champ, but that is a clothing line without the ion!. We just love to play on words and confuse people even more than they already are!. Um, butter beans are not dried beans!. They can be, but so can the lima bean!. Lima beans are simply a different variety of the butter bean!.

The two beans are very closely related and can even be cross-bred; therefore, it is not uncommon for lima beans to also be called butter beans!. The difference, beyond the physical attributes, is that lima beans do not tolerate heat well!. Here in the south, we grow what we all call the butter bean as opposed to the lima bean (very common practice to go pick them off the vine yourself)!.Www@FoodAQ@Com

Okay, from a farmer!.!.!.they are indeed the same bean, but it depends on the curing process and cooking that makes them a different name!.

First, lima beans are fresh or dried!. The fresh ones have the traditional green coloring, dried turns them an off white!.

Butter beans are dried lima beans that are cooked in a butter sauce and either canned or frozen for future use!.

LOL, hubby calls both of them "slimer" beans!.Www@FoodAQ@Com

Where I grew up & still to this day- everyone I know, calls a
Lima bean, a lima bean & a butter bean, a butter bean,
Noone ever said, they were the same!.
Now, my Mom is 78yrs old & she would argue with anyone
who said they are the same!.

I was always told that a lima bean is when they're young and just ready for eating and a butter bean is when they are fully ripe(and they do have a taste somewhat like butter)!.Www@FoodAQ@Com

Lima beans are greenish; butter beans are yellow-white!.
