In the book of Leviticus in the bible, there are 613 "rules" about living a kosher lifestyle, and many of them are dietary restrictions. For meat to be kosher, it has to be ritually slaughtered, drained of blood, and blessed; ditto chicken. We never, ever serve meat and milk at the same meal, and wait an hour between consuming one to consume the other. We usually have two sets of dishes; one for meat, one for dairy dishes. Meat can only be eaten if the animal chews the cud and has a split hoof, and pigs are forbidden for that and other reasons. We do not eat shellfish or bottomfeeders. For any food to be certified kosher, it must be inspected and blessed and certified by a rabbi, and just because something is kosher during the rest of the year, during Passover it's got to be not just kosher, but certified KFP, or Kosher for Passover. There are sooo many restricions, and these are just a few of the most significant. Often people who don't keep full kosher or live an Orthodox lifestyle still don't eat shellfish or pork, and don't mix meat and milk.

Grew up in a modern kosher household



Basically, the food has to be passed through by a special inspector, i believe its called a Maschia.

Anyways, before the food is inspected, if it is an animal we're talking about, the animal has to be killed a certain way. Also, never, ever, can meat or dairy products ever touch.

After, the product has to be stamped to show that it is kosher

For something to be parve (i know this wasnt in the question but i'll throw it in) the product must contain neither meat OR dairy products.

Koshering involves the animal to be slaughtered while alive and hanging upside down, with a special siphon spike which is poked into the jugular of the throat and the animal is bleed out to death. This is done under the supervision and blessing of a rabbi.
