What cheese do Mexican restaurants use for queso?!

Question: What cheese do Mexican restaurants use for queso?
I've celled several and they all say Velveeta - they are lying. I made queso with Velveeta and it was effing nasty.

Answers:

Chihuahua cheese, or Oaxaca. On beans they use Queso Fresco. You can sub Monterrey Jack or Muenster if you can't find the authentic cheese, but even Aldi carries it in my area.

Worked at a Mexican restaurant for years, cook Mexican food.

they DO use Valveeta, I've seen it made... but like in my friend's restaurant they also add chorizo to it and some other stretchy cheeses like monterrey jack. Good luck .

Queso Blanco, add rotel, or chopped jalapeno's, the canned ones are great!
