When cooking with red wine-?!


Question:

When cooking with red wine-?

And u have to reduce by 1/3, does it mean boil at high a temperature or just simmer for 10minates? (this is for a red wine sauce for steaks) it never works for me. Also what wine is best?


Answers:

Yes simmer or cook in a casserole type disk in an oven with the meat BUT at a lower heat and longer time setting. And dont forget to have a bottle of white wine handy for personal refreshment
