You can make something in the crockpot. Everything always turns out good in a crockpot.
This is one of my favorites. I also add potatoes and carrots about 1/2 way though.

Serve the lasangna in the pan that you just pop in the oven , with a salad and some french bread..for dessert (or with after-dinner coffee) do a small slice of cheese cake...

Easy Beef Strogonoff

* 1 lb. ground beef
* 1/2 tsp. garlic powder
* 1/2 tsp. salt
* 1/2 tsp. ground black pepper
* 1 cube beef bouillon
* 1 medium onion, chopped
* 8 oz. fresh mushrooms, sliced
* 1 pint sour cream
* 4 oz. egg noodles, cooked and drained

What You Do

* In a large skillet brown beef in oil over medium high heat. When meat is browned, drain excess fat from skillet. Add garlic powder, salt and pepper and stir in.
* Add bouillon, onion and mushrooms to skillet and saute until onions are translucent. Remove from heat (very important) and add sour cream. Stir all together and serve over hot cooked egg noodles.

buy the packets of frozen cod in butter sauce put them in an oven proof dish drain a can of sweet corn and add to the fish. make up a packet of ready mash and mix with grated cheese put on top of fish and corn mixture dot with butter and bake all this can be done well ahead of time and put in the oven about 45 mins before you need it you could leave out the corn and add some prawns. serve with crusty bread and dressed salad.

Well if they like chicken i have a easy reciepe for you
take some boneless chicken and put it in a pan with a little oil and cook it till its done then add a can of cream of chicken, then fill the can 1/2 way with milk and pour it in and let it heat up. While thats cooking boil some egg noodles and then when its done pour the chicken over the noodles takes bout 30 min to cook :)

You could do a roast
or spaghetti bolognaise or even curry.

Three differant pizzas.Meat,fish & veg & homemade chips.
Icecream & fruit with wine for dessert.Good luck.xx

Just made this last night - it is totally foul-proof, looks beautiful on a platter & is delicious.

Baked Chicken
1 whole chicken approx 4 lbs (if you need more food, do 2 chickens)
Olive Oil
Salt & Pepper
Lemon, Orange or Lime
Parsley (or Rosemary), fresh or dried is fine

Preheat oven to 375. In baking dish or roasting pan, brush chicken with olive oil. Slice orange, lemon or lime, place some of the slices under the chicken, squeeze some juices over the chicken & put slices in the cavity of the chicken. Salt, pepper & parsley to taste. Bake in oven for 1 hour 15 minutes, more for larger chicken.

At the grocery store you can buy Uncle Ben's 90 second wild rice packets - all you need to do is microwave them! Check in your produce section for green beans that you also just toss in the microwave, bag & all.

For an easy, but fancy looking dessert, buy an angel food cake from the bakery, cool whip & some fresh berries (blackberries, strawberries, raspberries, blueberries - one kind or a few different ones, I love the blackberries & strawberries together). In a saucepan on low heat, mix berries, some sugar & a few tablespoons of water. This will leave you with a nice berry sauce. Plate angel food cake, warm berry sauce on top & dollop of cool whip. So yummy & light.

Why don't you ask your better half what the in-laws expectations are.

I would be more concerned with making the house look presentable and making sure you have decent answers for when they try to rake you across the cools.

I am certain being an upstanding gentleman whom has goals and ambition will impress them more than a plate of chow.

So, you need to impress them, but don't want to be "slaving" in the kitchen while they're there:) These are easy,yet impressive:

HOT CRAB DIP
8 oz. cream cheese, softened
1 TB. milk
1 (6-1/2 oz) can flaked crab meat
1 TB. finely chopped onion
1/2 tsp. cream style horseradish
1/4 t. salt
dash of pepper
1/3 c. toasted sliced almonds
assorted crackers for dipping (Triscuits are good)
Combine softened cream cheese & milk. Add rest of ingredients and blend well. Spoon into a small casserole dish & sprinkle almonds on top. (Can refrigerate at this point until ready to bake). Bake at 375 for 15 min, or until it bubbles. Serve with crackers...

STUFFED PORK CHOPS
1 THICK boneless pork chop per person
Stovetop stuffing mix
Lawry's Marinade (bottle - Hickory or Mesquite)
Make stuffing for as many people as you need, per directions on box. Cut a pocket into the sides of the pork chops, and put stuffing inside (save extra to put under the chops when you serve them). Put the chops into a foil lined pan, with a little marinade on the foil, and alot of marinade over the top of the chops. Cover with foil and bake at 375 about 30 min; uncover and bake another 15-20 min. (You can get them ready & stick in the refrigerator until you're ready to bake them)

SPINACH SALAD
1 fresh bunch of spinach, washed & torn up
about 8-10 sliced fresh strawberries (or drained mandarin oranges)
1 c. walnut pieces
sugar
bottle of Raspberry-Walnut Vignarette salad dressing
Stir the walnuts in a frying pan with a little sugar, until the sugar melts and coats the nuts. Toss the nuts & the strawberries with the spinach and lightly toss with some dressing.

Steamed frozen cut green beans (just with real butter on top);
Garnish the plates of green beans/pork chops with some sliced oranges....

SUPER FUDGE PIE
1/2 c. butter
2 sq. unsweetened chocolate
2 eggs
1 c. sugar
1/4 c. flour
pinch of salt
Vanilla ice cream or whipped cream for topping
Melt butter & chocolate together. Beat eggs in a bowl and gradually add sugar. Add flour & salt; combine with the chocolate mixture. Pour into an ungreased 8" pie pan and bake at 350 for 20-25 min. Cool and freeze. (Doesn't need to be thawed out to serve). Top with ice cream or whipped cream .... DO AHEAD

Make Fettuccine Alfredo---very easy. All you need is a box fettucine, grated Italian cheeses (a blend), a stick butter & heavy whipping cream. Serve w/ great salade & garlic bread.
