A big pot of homemade chili and corn bread.

We just had one....here is what we had.
Spinach/artichoke dip in bread bowl(heated in oven)
Cheeseball/breadstix's and crackers
small cheese tray
assorted chips
Nacho platter/Dip
7 layer salad
Big pot of Chili,sides of chopped onions and shredded cheese.
Pork Tenderloin,shredded for sandwiches
Lots of hard rolls
Homemade FF's
and Pizza

Stew or soup. Maybe roasted potatos.

A pot of home made pea and ham soup with buttered crusty rolls and garlic croutons.

If I was having the potluck I'd supply the main dish. In my case I always default to my spiral sliced ham and smoked turkey breast. If I was attending one, I'd bring an appetizer since most people seem to bring desserts. Those trays with sausage and cheese always go over well.

Sloppy joes if it was at my house, if not then I would bring my killer brownies only because they are usually requested.

Chilli

I made up this recipe....and people always request it.

1 pkg. (8-10) frozen bean burritos

Deep fry the FROZEN burritos until crispy and golden brown. Set aside a few minutes until cooled enough to handle.

Sauce:

1 tsp. Garlic powder, 2 tsp. cumin powder, 2 tsp. chili powder
5 TBS fresh cilantro (minced up)
1 can green chili's chopped up
2 cans or jars of cheap spaghetti sauce
Mix these 2 items together with spices and cilantro.

Cover the bottom of a 9x13 inch baking pan with enough sauce mixture to cover the bottom of the pan.

Cut across each fried burrito into about 10-12 bite size pieces. Place each piece in the pan on top of the sauce, spacing them slightly apart to allow sauce to get in between the pieces. Do this until pan is full. Cover with sauce mixture.

Topping:

Sprinkle with shredded cheese of your choice. Bake at 350 degrees for about 20-30 minutes, until bubbly and cheese is melted and has light golden brown spots on top.

**** It is good just like this... but you can go all out and bring salsa, sour cream, extra cheese, chopped: onions, tomatoes.

*** Sometimes I add chili beans to the sauce too.... or add some cooked chicken or hamburger... It depends how much I want to do...

My Meatballs

Everyone who eats them tell me I have the best balls in Bedford


Chilled Meat Balls

1.5lbs - 2lbs extra lean ground beef or ground sirloin
1 package onion soup mix
1 cup Italian style bread crumbs
? teaspoon crushed red pepper
1 tablespoon Chili powder
2 tablespoons minced onion
2 eggs
2 tablespoons Worcestershire Sauce
1/4cup of Barbeque sauce

Preheat oven to 350
Spray a 9x13 pan with cooking spray
In a large bowl combine all ingredients use hands to mix well
Shape into 1'’ balls

for the sauce

1 16oz can jellied cranberry sauce
1 12oz bottle chili sauce
2 tablespoons brown sugar
2 tablespoons lemon juice

put all ingredients in a blender.
Blend on high for 2 minutes

pour over meatballs and bake 35 to 40 minutes

These are even better if made they are made a day ahead
