Can you tell me this dish?!

Question:

Can you tell me this dish?

I just saw a post for red beans and rice. I've only had it a few times, and it was always made with chicken livers in it, chopped very fine, giving it a very dictinct taste.
I searched recipes and didnt see any that had it prepared that way.. Is it called something else then or perhap just the way these Cajun ladies made it.
Note: It wasn't just one person's version, but several.

Answers:

I think you are thinking of Dirty Rice, not Red beans and rice.

1 cup brown rice, cooked in 2 cups chicken stock
1 cups white rice, cooked in 2 cups tomato juice
1 lb chicken livers, chopped
2 tablespoons butter
1 large onion, chopped
2 bunches green onions, chopped
1 tablespoon crushed garlic
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon cayenne
2 cups red beans or black beans, washed and drained

hot sauce, optional

Cook rices and set aside.
Saute chicken livers and chopped onions in butter until livers are cooked through and onions soft.
Add green onions and spices, stir and cook 5 minutes over low heat.
Add rices and warm though.
Add beans, stir, cover and heat through.
Hot sauce on the side
