what are the ingresients for a basic(no nuts) tiffen cake..and how 2 cook?

Nutty Chocolate Tiffin

Ingredients:

8oz unsalted butter

2 tablespoons golden syrup

8oz quality plain chocolate (50-60% cocoa solids)

300g pack rich tea biscuits

2oz blanched hazelnuts, chopped

2oz no-soak apricots, chopped

2oz dessicated coconut.

Cut butter in cubes, break up chocolate, and place with the syrup in a heatproof glass bowl over a pan of not quite simmering water. Let it all melt together gently while you prepare the other ingredients.

Crush the biscuits to large crumbs. You can either do this carefully in a food processor or by putting the biscuits in a polythene freezer bag and crushing with a rolling pin. Either way, it speeds up the whole process if you roughly crumble them with your hands first. Stir all the ingredients together till well mixed. Pour into a 8" square cake tin, lined with clingfilm. Let it set in a cool place. Cut into whatever size pieces you think best - the original recipe suggested 16, but it is very rich so I cut it into 32. Small pieces make good petit fours with coffee after dinner.

hold the hazel nuts if you don't like nuts.

This is a tasty sweet that can be served with coffee or as a dessert. It can be kept in the freezer or refrigerator.

Degree of difficulty: Low

You need:
150g chocolate, melted
100g mixed dried fruit

50g toasted coconut
1/3 cup rum and/or orange juice.

Method:
Mix the dry ingredients together with the melted chocolate and process until the mixture binds together. Add the rum/orange juice and shape into two large or 4 small log shaped rolls. Sprinkle plain coconut, toasted coconut or finely chopped nuts onto a benchtop and roll the chocolate mixture to coat the outside of the rolls. Wrap in greaseproof paper or alfoil and chill until firm.
Slice and serve with coffee or ice cream.
