I cook easy things

A wrap or paninis with whatever you have on hand. Bean and cheese quesadillas are quick and yummy.

Black Bean Quesdilla

* 2 (15 ounce) cans black beans, rinsed and drained
* 1 2/3 cups salsa, divided
* 10 (8 inch) flour tortillas
* 2 cups shredded Colby-Monterey Jack cheese
* 1/3 cup sour cream

1. In a bowl, mash the beans; add 1 cup salsa. Place five tortillas on ungreased baking sheets; spread with bean mixture. Sprinkle with cheese; top with the remaining tortillas.
2. Bake at 350 degrees F for 15-18 minutes or until crisp and heated through. Cut into wedges. Serve with sour cream and remaining salsa.

Happy cooking!

Dice an onion, put to caramelize in a pan over med heat with olive oil. Keep your eye on it, make sure it just browns not burns. If you like garlic, halfway through add some finely chopped garlic to the onions.

While onion is going cook some pasta, whatever you have will do. I use linguine or spaghetti. Cook pasta to your liking in highly salted water, should taste like the sea.

Drain and toss with small amount of olive oil. Plate, top with caramelized onions and grated cheese. Parmesan, asiago, Gruyère, pecorino romano. Whatever you have will be good, I've even used the can parm before and once in a pinch feta. This meal takes 20 min and it's yummy.
