Cupcakes baked in ice-cream cones.
You could do any individual size of your personal fav dessert...mini tarts, cheesecakes, cinnamon rolls, whatever YOU love.
You could do something with cookies, perhaps a fruit pizza, dessert pizza (both have cookie for the crust) or just a giant cookie decorated like a cake, or just serve any number of your fav homemade cookies...or you could do a buy a bunch of Oreos and pretzels and apply various dips for it.
You could do make your own sundaes, dip out bowls of ice cream and then set up lots of toppings, and people can choose what they want on it.
You could do fondue sauces...chocolate, caramel, etc sauces that you use to dip fruit chunks, marshmellows, cubes of pound cake, etc.

Have a ice cream cake with three layers of your favorite ice cream flavors and then a cake layer on top(chocolate or white or a mix of both,marble).Decorate the top and sides with your theme using fruits and frosting. Happy B-day ;)
