buttercream(ish) recipe?!
thats not exactly what i wanted... i wanted buttercream because it tends to be thicker/sitffer and therefore is easier to smooth, so its easier to decorate. is there a way to make a buttercream-like frosting with cream cheese? my mom will get mad if i dont use it because she bought it espeically for that. any recipies that are stiff and easy to smooth, and therefore easy to decorate using cream cheese??

Yes there is a way. it will be cream cheese frosting. Pay attention here
For every 1 cup of cream cheese add 3 cups of powdered sugar and 1 teaspoon of vanilla extract. If after you are done mixing it it is still not as stiff as you want it add some more powdered sugar until it is as stiff as you want it if it is to stiff for you add some water, milk or for a little tang add some lemon juice.
I am a SERV SAFE certified Culinary Arts Student.
fyi serv safe is a test that you need to take to be able to work with food for the school I am going to. It is like the food handlers card but the test is more difficult and to have a serv safe card feels like more of an accomplishment then just a regular food workers card.
All you need to do is add less liquid and more powdered sugar to make it stiffer than traditional cream cheese icing. I use it all the time because it tends to be less sweet than traditional decorating icing. Cream cheese icing is super easy to smooth because of the inherent creaminess, even after adding the additional powdered sugar. Start with a stick of butter and 8 ounces of cream cheese and 4 cups of powdered sugar. Add the powdered sugar as necessary to get the texture you want.
There's an easier frosting that you can make, and you probably have the ingredients. All you need is a whole stick of butter and a bag of confectionate sugar. Also about 3 to 4 tbsps of milk, maybe 5 if needed. Whip with beater until you get the consistency you would like.
