Is there any other use for a bag of 30 lemons apart from squeezing them on pancakes and cooking with them?!
Anyway, one or two, fine to put on my pancakes but noooooo not my mother! she has to buy me a huge bag of the darn things.

lemon meringue pies is a definitely good idea. Also, get a sealable quart container, like tupperware, rubbermaid and a box of un-iodized salt. Slice the lemons 1/4 inch thick. put a thick layer of salt in the bottom of the container, then a layer of lemon slices, salt, lemons, salt lemons until your last layer is salt. Then cover and refrigerate. refrigereate the lot. Aftger a week start using them in recipes that call for lemon. stuff a chicken, slice them up in a salad. Rinse them off and use your imagination.

4 eggs
1 1/2 cups milk
1 1/2 tablespoons grated lemon zest
2 tablespoons lemon juice

Preheat oven to 350 degrees F (175 degrees C). Grease one 2 quart baking dish. Separate the eggs.
In a large bowl, combine the flour, butter and 1 1/2 cups of the white sugar.
Beat the egg yolks and add to the sugar mixture along with the milk and lemon zest. Mix well and add the lemon juice.
In another bowl beat egg whites until stiff, slowly adding the remaining 1/2 cup white sugar. Fold the egg whites into the batter. Pour batter into the prepared dish.
Place the dish in a shallow pan of hot water and bake at 350 degrees F (175 degrees C) for 55 to 60 minutes or until lightly browned. Serve warm of chilled with confectioners' sugar dusted on top.
Main thing to do with Lemons is cooking with them like Lemon Meringue Pie & squeezing them for making Lemonade but you could freeze some of the juice in ice cube trays for use when needed. Look up handy hints for lemons on internet for other uses. Lemon Juice acts as a bleach on some things, so try rubbing it on a chopping board etc. Good for rubbing on hands to get rid of onion smell etc. Citrus has been found to be a great cleaner & is used in a lot of cleaning products now. Perhaps you could add some to your cleaner or look for recipe to make your own.
1: This happened to my dad before, so he told me a story. But anyway, he went inside a burning building and got a man out of it. He was unconscious so he for some reason had a lemon with him. He opened it and put some of the juice on his lips,and the sour taste made him wake up somehow.

Cut in half, sprinkle with a little salt and use them to clean your kitchen. They make amazing counter cleaners! You could make lemon bars, or pie. Lemonade...water sugar and lemon juice. Rub them on your fingernails to help whiten them. You can use the juice to help whiten stains on dishes, counters, cutting boards..etc. Arrange them in different ways and take pictures. Get creative. Then you could print and frame one for an interesting wall hanging. Plus you will always have a reminder of your mothers weird love!

You can use the juice as a hair rinse , it makes your hair shine. You can use a squeeze of juice in washing up water to kill the grease, a slice of lemon in hot water first thing each morning is a good detox. Actually it was a pretty good present.

Have a lemon tree in the back yard, that's what I do with them!

Make lemon aid!! They also are great for cleaning your garbage disposal. Just cut up one and let it grid up in there. You could make a lemon tart. Good luck!
Squeeze them into iced tea or 7 up soda for a nice taste. Also you could make lemonade.

Lemon Blueberry Bread Recipe:
1 1/2 cups (195 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons (85 grams) unsalted butter, room temperature
3/4 cup (150 grams) granulated white sugar
2 large eggs
1/2 teaspoon pure vanilla extract
1 tablespoon grated lemon zest (outer yellow skin of the lemon)
1/2 cup (120 ml) milk
1 cup fresh blueberries
Lemon Glaze:
1/4 cup (50 grams) granulated white sugar
2 tablespoons fresh lemon juice
Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the center of the oven. Butter (or spray with a non stick vegetable spray) the bottom and sides of a loaf pan (9 x 5 x 3 inch) (23 x 13 x 8 cm).
In a separate bowl, whisk together the flour, baking powder and salt.
In the bowl of your electric mixer, or with a hand mixer, beat the butter until softened (about 1 minute). Add the sugar and continue to beat until light and fluffy. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and lemon zest. With the mixer on low, add the flour mixture (in three additions) and milk (in two additions) alternately, starting and ending with the flour. Mix only until combined. Gently fold in the blueberries.

But personally, with that many lemons, I'd be making this:
HOMEMADE LIMONCELLO:
Ingredients:
* 20 lemons
* 2 (750-ml) bottles of at least 80-proof vodka
* 2 to 4 cups of water
* 2 to 4 cups of sugar
You will also need a number of glass jars:
* One or two large glass jars to hold the limoncello while doing its thing (I have 2 3 litre glass jars that I am using.)
* Nice decorative glass bottles that you can use to put the limoncello in after it is finished.
Making the limoncello:
Step 1:
1. Scrub and dry all the lemons.
2. Remove the peel from the lemons using either a very sharp peeler or a fine microplaner. (I used a microplaner which worked well.) Be careful to avoid the white pith – it will make the limoncello bitter. Scrape any off the back of the peels if you can. (I know this is the time consuming part! Open a bottle of wine or make a vodka martini while you work – have fun! Enlist friends to help!!)
3. Put the little peels in the glass jar (divide if using 2 jars) and add in the vodka. Seal tightly.
4. Put the jars in a cool, dark place and let them do their thing for at least 2 weeks. (The peels should lose their color when they are finished mixing their little oils with the vodka.) Some folks leave it alone for up to 2 months so you decide.

5. Every few weeks, go peek at your little brew…swirl the peels around to mix everything up.
Step 2:
1. Make a simple syrup. Put the water and the sugar in a heavy bottom saucepan over medium heat. Slowly bring to a boil, stirring constantly until it turns clear.
2. Let cool.
3. Add the simple syrup to the limoncello jars. (Divide if using two jars).
4. Put the jars back and continue to let steep for a week or two. The flavor will continue to improve…
Step 3:
This is the homestretch!
1. Pull out your brew and strain out the lemon peels using cheesecloth or a coffee filter.
2. Press on the peels to remove all the vodka and little lemon oils that you can.
3. Put the limoncello in your clean, glass bottles and store tightly. Limoncello should be stored in the freezer and served ice cold.
Serve and enjoy!!
