What is sufrite? (Italian food)?!


Question: What is sufrite!? (Italian food)!?
My mother used to eat it when she was a kid, it's some kind of Italian meat!. We are trying to figure out what it's made of and what it is!.Www@FoodAQ@Com

Sufrite, Sofrito in Italian are both the same and not like the Latin sofrito!. The main ingredient is no longer available for human consumption due to the USDA!. The primary ingredient is Lungs and any other organ meat like heart & spleen but not liver!. It was fried with hot peppers, tomatoes, parsley and onions!. It was delicious!. The reason for banning it is because of air pollution and the lungs are now used in animal food!. Www@FoodAQ@Com

I grew up eating just about everything Italian there is to eat! I can't figure out what you might be looking for!. I doubt that it's sofrito!.!.!. this is a mix of tomatoes, spices, onions and herbs that is used as a base for many Latin dishes, but it's not something you would just eat by itself, and there is no meat in it!. And it's not Italian!. The only other thing that comes to my mind is the italian technique for saute'/pan frying many things!. To spell it the way it's pronounced would be SHVEET!. This is usually done with the two main ingredients being olive oil and garlic!.

I think you mean Sofrito!.

It's originally a Puerto Rican food, and it is actually a sauce made from various fresh vegetables, specific to the region it originates from!. In Puerto Rican culture, it is also often made with meats (as you describe)!.

Soffritto is a base usually used when making tomato sauce!. It is not a typical Puerto Rican thing because many cultures use a "soffritto" base when preparing certain dishes!.

It is basically onions & garlic cooked in hot olive oil!. You can also add sliced celery, carrots and even mushrooms or egg plant!. Www@FoodAQ@Com
