Many reasons!. Firstly, it looks good and it's a good way to keep fresh fish which can be ordered by the customers!. Another reason is that the Chinese have a history with fishkeeping, I think they were the first people to keep fish in bowls for decorative reasons!. Another reason is that it's good feng shui to have some water in the house/restaurant!.Www@FoodAQ@Com

Chinese restaurants, if in Asian countries, such as Hong Kong, Macau or China etc, with a big fish tank at the entrance of the restaurant, probably means you can choose and buy your own seafood freshly and order to be cooked in the kitchen there the way you like, such as steam , fry, stew etc!.
If a Chinese restaurant in the western world such as Europe or US with a fish tank in it, it mostly is a Feng Shui thing!. One of the rule of Feng Shui is , a fish tank can bring wealth to you!. No matter where it is, be it in a home or in a restaurant!. It also depends on where you put the tank and what you put inside the tank!. Mostly they will put a kind of golden carp in it and which is a very expensive fish!.
Having said that, it doesn't mean that Chinese restaurants in Asian countries do not believe in Feng Shui, a fish tank in a Chinese restaurant in Hong Kong can just be for Feng Shui purpose!. Depends on what's inside the tank!. If you see lobster, king crab, prawn and all kinds of fish inside, it means they are for selling on the menu cause Feng Shui fish tank will only have fish in it!.Www@FoodAQ@Com

Contrary to popular belief on this board, its not usually because they are going to cook the fish that are in the tank (unless the tank is populated by large fish and/or lobster)!. Fish are considered good luck to the Chinese, and a particular number of fish is considered to be doubly good luck!.Www@FoodAQ@Com

2nd Reson: If the fish is not edible, the fishtank is for "Feng Shui" use!.

the fish tanks keep fish alive!. Chinese people love to have fresh ingredients, especially when it comes to seafood and meat!. thats why they keep fish there, so when they need to cook fish, they just kill one!. this method provides the best taste!. Www@FoodAQ@Com

well i'm chinese and i think the fish they put there, like shrimp and lobster, is for eating!. i've seen waiters get a net and take out a lobster before!. By the way, the lobsters have like i think rubber bands on their clawsWww@FoodAQ@Com
