Dinner menu for tomorrow night?!


Question: Dinner menu for tomorrow night!?
My boyfriend and his 3 year old son always come for dinner at my house on tuesday nights!. the last two tuesdays we've had venison spaghetti, and chicken stir fry!.

anyone have any good suggestions or good recipes for dinner!?!?!? (btw i have a 11 month old son, that i usually make something seperate for him)

Four-Pasta Beef Bake

This hearty casserole looks and tastes a lot like lasagna, but it's quicker to prepare since you don't have to layer it!.

Ingredients:
4 cups uncooked pasta (four assorted pasta shapes of your choice)
1 pound ground beef
1 medium green pepper, chopped
1 medium onion, chopped
1 cups sliced fresh mushrooms
2 jars (26 ounces each) meatless spaghetti sauce
1 egg, lightly beaten
2 cups (16 ounces) shredded part-skim mozzarella cheese

Directions:
Cook pasta according to package directions!. Meanwhile, in a large skillet, cook the beef, peppers, onions and mushrooms over medium heat until meat is no longer pink; drain!.

Drain pasta and place in a large bowl; stir in the beef mixture, two jars of spaghetti sauce and eggs!.

Transfer to a greased 3-qt!. baking dish!. Top with remaining sauce; sprinkle with cheese!. Bake, uncovered, at 350° for 25-30 minutes or until a thermometer reads 160°!.

Mexi-Mac Skillet
Light & Tasty

TIME: 30 min!.

Ingredients:
1 pound lean ground beef
1 large onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup fresh or frozen corn
1/2 cup water
1-1/4 teaspoons chili powder
1 teaspoon dried oregano
1/2 teaspoon salt
2/3 cup uncooked elbow macaroni
2/3 cup shredded reduced-fat cheddar cheese

Directions:
In a large nonstick skillet over medium-high heat, cook beef and onion until meat is no longer pink; drain!. Stir in the tomatoes, tomato sauce, corn, water, chili powder, oregano and salt!.

Bring to a boil; stir in macaroni!. Reduce heat; cover and simmer for 18-22 minutes or until macaroni is tender!. Sprinkle with cheese!. Yield: 5 servings!.

Pepperoni Pizza Bake

ingredients
1 package (16 ounces) wide egg noodles
2-1/4 cups pizza sauce, divided
1 cup sliced fresh mushrooms
1 can (2-1/4 ounces) sliced ripe olives, drained
1 package (3-1/2 ounces) sliced pepperoni
2 cups (8 ounces) shredded part-skim mozzarella cheese

directions
Cook noodles according to package directions; drain!. In a large bowl, combine noodles and 3/4 cup pizza sauce!. Transfer to a greased 13-in!. x 9-in!. x 2-in!. baking dish!. Top with remaining pizza sauce!.

Layer with the mushrooms, olives and pepperoni!. Sprinkle with cheese!. Bake, uncovered, at 375° for 15-18 minutes or until heated through and cheese is melted!.

Chicken Stuffing Bake
Quick Cooking

SERVINGS: 8
CATEGORY: Lower Fat

Ingredients:
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup milk
1 package (6 ounces) stuffing mix
2 cups cubed cooked chicken breast
2 cups fresh broccoli florets, cooked
2 celery ribs, finely chopped
1-1/2 cups (6 ounces) shredded Swiss cheese, divided

Directions:
In a large bowl, combine soup and milk until blended!. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, celery and 1 cup cheese!. Transfer to a greased 13x9 dish!.

Bake, uncovered, at 375° for 20 minutes or until heated through!. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted!. Yield: 8 servings!.

Well, you could do a soup or something!. But if you want to really get out of the box, try making something original, like a home-made-bread sandwiches!. Here is a good type of bread!.


Grandma Claire's Loaf!.

INGREDIENTS

* 1 1/2 cups of warm water (110 degrees F/45 degrees C)
* 1 cup tomato juice
* 2/3 cup of sugar
* 1 1/2 tablespoons active dry yeast
* 1 1/2 teaspoons salt
* 1/4 cup vegetable oil
* 5 cups bread flour
* 1 Cup of corn flour


DIRECTIONS

1!. In a large bowl, dissolve the sugar in warm water, and then stir in yeast!. Allow to proof until yeast resembles a creamy foam!.
2!. Mix salt and oil into the yeast!. Add tomato juice!. Mix in flour one cup at a time!. Knead dough on a lightly floured surface until smooth!. Place in a well oiled bowl, and turn dough to coat!. Cover with a damp cloth!. Allow to rise until doubled in bulk, about 1 hour!.
3!. Punch dough down!. Roll it for a few minutes, and divide in half!. Shape into loaves, and place into two well oiled 9x5 inch loaf pans!. Allow to rise for 10 minutes!. (This is optional) Punch a single whole into the middle with a fork and add a slice of butter o margarine in the cavity!.
4!. Bake at 350 degrees F (175 degrees C) for 30 minutes!.
