many ways to cook chicken however since its an open type question ill give you a cpl of ideas. My favorite is to take a chopped onion, carrots and celery and lay them in the bottom of a roasting pan......smear a tsp of olive oil over the chicken and sprinkle with ur favorite multi blend seasoning,,,i think emerils store bought seasoning is good.....then take two oranges cut in half,,squeeze juice over chicken and place 4 halves of orange inside cavity of ur chicken...bake at 375 for apx 1 hour......or internal temp reaches 170 if u hav a thermometer.....take out and let sit for 10 min's b4 cutting. enjoy!

im a chef

roasting in oven for 2-3 hours
or
rotisserie all at 350-400 degrees

An Hour and a half(90 min) on 400 degrees

Just wash it good with cool water, Spice it up the way you like, Pepper,Salt,Parsley flakes etc. Put a few Garlic cloves inside to give it a nice garlicky flavor.

I usually cover(loosely) mine with aluminum foil for half the cooking time, so It doesn't dry out or burn.

Once it's done; let it sit for 15 min. before cutting so the juices settle in.

Yes you can use Canola Oil, that's what I use and it comes out great.

look up recipes on the net or one of my favorite is to rinse chicken-pat dry. place in a roaster. add carrots, fresh garlic, red potatoes with skins on, and onion. add 1 cup of water. baste chicken with olive oil or Italian dressing while cooking.
bake at 350 for 90 minutes. cover. take cover off the last 1/2 hour to brown top. very good
