Tequila-Marinated Steak with Tomato Relish (serves 2; approx!. $13!.19/serving)
1 large boneless sirloin steak (approx!. 1!.5 lb; this looks like a lot but it shrinks a bit during cooking)
1/2 cup lime juice
1/2 cup chopped cilantro
1/2 cup olive oil
1/3 cup soy sauce Tomato relish 2
1/4 cup tequila
7 tablespoons minced jarred garlic
Grated peel of one lime
2 tablespoons cumin powder
2 tablespoons oregano
1/4 cup balsamic vinegar
4 teaspoons dried oregano
1/4 cup olive oil
1/3 cup chopped pickled jalapenos, plus pickling juice
4 scallions, chopped
2 lb halved cherry tomatoes
Equipment:
* Plastic zip-top bag
* Small saucepan
* Small sieve
* Grill or barbeque (you could also do this indoors under a broiler if you must)
1!. At least two hours before serving, make the marinade!. Whisk together the lime juice, cilantro, first 1/2 cup oil, soy sauce, tequila, garlic, lime peel, cumin and oregano!.
2!. Place your steak in the plastic bag!. Pour the marinade over it, seal, and refrigerate for at least 2 hours!. You can go as long as 8 hours; the longer it marinates the better the meal will be!.
3!. Make the relish!. Mix the vinegar, 4 teaspoons oregano, 1/4 cup olive oil, jalapenos, scallions and tomatoes in a large bowl and let stand until ready to serve!.
4!. When you are ready to cook, remove the steak from the marinade and let it come up to room temperature!. Reserve the marinade!.
5!. Prepare the grill for medium-high heat!. Grill the steak for approximately 10 minutes or until your desired doneness level!.
6!. In the meantime, bring the reserved marinade to a boil in the saucepan!. Reduce by about half!.
7!. Strain the marinade into a small serving bowl or gravy boat, pressing the solids with a wooden spoon to extract maximum flavor and juice!. Discard the solids!.

No!. You'll only end up burning off the alcohol and then you will burn the outside of the meat!. A not so pleasant taste when it comes to food!.
Cook it properly - first pan sear it to seal in the juices and flavor of tequila, then broil it in the oven until nice and golden brown, completely cooked through (slight pink touches are okay) and crispy!.Www@FoodAQ@Com

I Just marinate my meat in tequila and then put it on the grill!. It might catch on fire for a couple of minutes but not long!. It's good on the grill!. I don't do it in the house because I am afraid I will catch the house on fire!. Be careful!.Www@FoodAQ@Com
Cook your meat first and once it's how you like it, then put the tequila and let sit for a couple seconds and remove from heat!. You don't want to leave it on there too long!. Www@FoodAQ@Com
