Here is your simple basic recipe!!!
I wish I could have corned beef and cabbage!!! Its my favorite but my husband gets ill at the smell of cooking cabbage!!! Enjoy it for me.

Crockpot Corned Beef and Cabbage
3 lb Uncooked corned beef brisket
2 Carrots, chopped into large pieces
5 Small red potatoes, halved
2 Onions, quartered
3/4 cup Malt vinegar
1/2 bottle (6oz) Irish stout (Guiness)
1 tsp Mustard seed
1 tsp Coriander seed
1 tsp Black peppercorns (whole)
1 tsp Dill seed
1 tsp Allspice (whole)
1 Bay leaf
1 Head of cabbage (small), cut into wedges
For the Horseradish sauce (optional):
1/2 pint Whipping cream
3 tbsp Prepared horseradish

Preparation
In a LARGE (6.5 qt) crockpot, place the carrots, potatoes and onion in bottom. Add the liquids.

Spice rub the brisket; place on top of the vegetables.

Cover and cook on LOW for 8 hours. Add cabbage wedges. Cook an additional 3 hours on LOW.

Serve with Coarse Grain Mustard and Horseradish Sauce.

For the Horseradish Sauce:

Whip cream until it peaks, then fold in horseradish.

Cook's Notes
You need a BIG crockpot. Serve with mashed potatoes, of course.

CROCK POT CORNED BEEF

3-4 lb. corned beef brisket or bottom round
1 (6 oz.) can frozen orange juice, thawed

Trim excess fat from corned beef. Cover with water and let stand 30 minutes. Drain thoroughly. Fit beef into slow cooking pot. Pour orange juice over meat. Cover tightly and cook on low for 10-12 hours or at high for 5-6 hours

I put it in on High until it gets bubbling then turn to low for about 6 hours. When it is done the way we like it I can slide a fork right through the meat and when I twist it the meat falls apart easy. I put cabbage in the last hour. I do not care for cabbage overcooked, some do I guess. Potatoes I can not say as I do not care for potatoes with corned meat of any kind. Hope this helps you.
